Sweets of kerala:-)

5 egg yolks
2/3 cups sugar
1 cup half and half
2 tablespoons butter
1 cup whipping cream
2 teaspoons vanilla extract
Beat yolks and sugar until blended. Pour in top of double boiler. Stir in half and half. Cook and stir over boiling water until thickens. Set aside - stir in butter. While cooling on a rack, stir occasionally until room temperature. Stir in whipping cream and vanilla. Freeze according to manufacturers directions.@@@@@@

Thin vermicilli - 200gms
Sugar - 3 cups
Sweetened condensed milk - 200gm
Milk - 1 litre
Ghee(clarified butter) - 3 tbsp
Unsalted raw Cashew nuts - 50gms
Black raisins - 50gms
Cardomom powder - 1tsp
preparation method@~~@
Method : Take a heavy bottom flatvessel. Add the ghee. Fry the cashew till golden brown and remove. Add the raisins and stir for a minute and remove. Add thevermicilli and roast till golden brown. Add more ghee if required. Add the sugar and stir for 5 minutes. Be careful that the sugar does not stick to the vessel.Add the milk and stir on low flame. Take another pan and boil 3 cups of water. Off the gas and add the sweetened condensed milk to the water and dissolve it. Meanwhile the milk would be boiling. Check if the vermicilli is cooked. Do not over cook it. It should be just done. Add the diluted condensed milk and keep on stirring. Check the sweetness. Add more sugar if needed. Keep on stirring till the mixture starts getting thick. Turn off the gas. Add the fried cashew nuts and raisins. Add the cardomom powder and keep covered. Can be served hot or chilled. If the mixture gets thick add some boiled milk to the payasam

Method : Cut the cake into two horizontally Mix the milk with the cream and add sugar to taste.Take a vessel and pour some of this at the bottom and then keep one piece of the cake that was cut.then pour the mixture on top of the cake again.Place the other piece of cake on top of this and pour the mixture again on top of the mixture and then place the fresh fruits on top of this.Refrigerate this for 4-5 hours

Method : Swift flour and baking poweder together and put it away. Beat butter and sugar untilfluffy. Add egg yoke and beat it good. Add flour. mix it with a spoon. Make sure you don't mix too much once the flour added.Then add fruits, vanila andjathica poweder.Beat the eggwhite until it makes fom and add to the bater. Add burnt sugarfour colour.Leave it for about 15 minutes.pour it in to a buttered squre pan,about 1/2 the pan.bake for 3o minutes at 350.or until the center is clear when you inseart a spoon.
To burn the sugar heat the fryingpan. Put 2 table spoon sugar stir it until it becomes brown.then add 4 table spoons of hot water and mix well. make sure it cools realy well before add to the cake mix

1) Make a mixture (beat in the big jar of the mixie) of 1 tin of pineapple slices (chopped) and alittle of its juice from the tin, 1 tbsof butter, 1/2 cup sugar , little vanilla essence and 1 egg .
2) Tear up 3 slices of bread ...(especially the top and bottom slices which are dry and hard)
3) Grease a baking tray with butter and put the bread pieces in it. Pour the Mixture onto it. Each tiny breadcrumb should be soaked. Bake for a few mins (20 mins on medium heat) or microwave for 10 mins
4)Sprinkle brown sugar on top and serve...

Method of Preparation
S oak almonds in warm water overnight.peel and grind in a mixer to a fine uniform paste. Now boil sugar in a cup of water and prepare thick syrup. add almonds(paste)and stir well.cook for 5 minutes on slow fire.add cardamoms and remove from fire. grease a plate with ghee andspread the paste evenly. decoratewith silver leaves and set aside,tillcool. cut into square or diamond shaped pieces as you desire and serve.

mango pulp- 1can
heavy cream - half pt
unflavoured gelatin - 2 packets
sugar - 1 cup
cream cheese - 1(8 ounce)
vanilla essence - 1tsp
warm water - 1/4 cup
graham cracker crust-2

Boil heavy cream in a pan. mix the gelatin in warm water and allow the gelatin to get dissolved completely.blend the heavy creamand gelatin together. after that add cream cheese and sugar intoit and blend again. now pour the mango pulp turn by turn into the blender and beat it until the whole can of mango pulp is finished.put vanillaessence in to the beaten pulp and beat again for 1 minute. then pour the entire pulp into the graham cracker crust and put in the fridge for almost 7hrs to set completely.

1/2 cup milk
1 1 tin condensed milk
2 1 teaspoon sugar
3 3 tsp. Ghee or Butter
4 Few Cashewnuts
5 Few Almonds
6 cardamom powder
7 saffron (a pinch)

Peel the carrots, and grate it.In a sauce pan, cook the grated carrot(in a low flame) with milk until the carrot's raw flavor is vanishing.Add cardomom powder. Grind this to a semi-liquid stage. Return mixtureto sauce pan, and allow it to boil for 10 minutes (take care it is notthickening), add sugar and stir well. To this add the condensed milk and bring it to boil.Add saffron. Add cashewnuts and almonds fried in butter. Mix well. Refrigerate. serve cold. Very healthy dessert.

cooked rice - 1 glass
cooked dal (grean colour small grain) - 1/2 glass
cardamom - 3
coconut milk - 1/2 coconut's
sugar - up to you

Put cooked rice and cooked dal in a vessel, add 1 1/2 glass of water, cook for 15 min, add sugar in it, put cardomom, add the coconut milk. Heat for for 7 min. Thats it !!!
You can serve, hot / cold.

Cook gratted carrot with butter in a pan till the water in carrot becomes dry. then add sugar cardamom , milk powder n smash it well in simmer for around ten minutes or it will be very much mixed. (can also use fresh milk but it will take much more time)
