Bread Pudding

Made with Pannetone

Ingredients: 1 500g pannetone, 100g dried mixed fruit, 750 ml milk or single cream or mix, 4 egg yolks, 100g sugar, 1 vanilla pod or extract.

1) warm milk or cream in a pan with vanilla till gently bubbling at side of pan.

2) turn off heat and let flavour infuse. Beat eggs with sugar.

3)slice pannetone thinly and layer bottom of greased ovenproof dish. Cover layer with fruit, then add pannetone on top. Repeat till dish is full.

4) remove vanilla pod from warm milk. Add milk to eggs and whisk together. Pour custard over pannetone allowing it to soak all through. Grate a little nutmeg over.

5) place into medium oven, gas mark 3, for about 1 and half hours.

Serve and enjoy!
